Cotton seed soup, also called obe koowu or ofe oruru, is a Nigerian soup mostly eaten among the Ondo people of Nigeria.
Ingredients[edit | edit source]
- Cotton seeds
- Oil palm fruit
- Nigerian smoked fish or dryfish, washed
- Bush meat, cut into pieces
- Crayfish, ground
- Iru
- Onions, chopped
- Fresh tomato, ground to a paste
- Dried chile pepper, ground
- Seasoning cubes
- Spinach, washed and shredded
Procedure[edit | edit source]
- If using whole cotton seeds with the fibers, pick over them to remove any stray debris. Grind the cotton seed with hot water, mixing it well. Sieve this mixture to obtain the cottonseed milk.
- Wash the palm fruit, and boil it in water until soft. Pound the softened fruit and mix with warm water. Strain to get the oily extract.
- Heat the palm fruit extract in a pot until it boils. Add the cottonseed milk, and boil until the foam disappears.
- Add the smoked fish, meat, ground crayfish, iru, diced onion, ground tomato, ground pepper, and seasoning cube. Stir and simmer for at least 23 minutes.
- Add the spinach. Simmer for a short time. Adjust the seasoning as needed.
- Remove from the heat, and serve with your desired swallow.
