Nigerian mashed beans is a simple dish made from peeled beans.
Ingredients[edit | edit source]
- Dried honey beans or black-eyed peas
- Onions
- Bell pepper
- Ground crayfish
- Salt
- Desired condiment(s)
Procedure[edit | edit source]
- Soak the beans in cool water until the skins are loosened.
- Rub the beans to remove the skins. Discard the skins.
- Transfer the beans to a pot, add the onions, and cover with water.
- Cover the pot and simmer for 1 hour until the beans are tender.
- Mash the cooked beans.
- Grind the pepper with onions.
- Add the ground pepper, crayfish, salt, and condiment(s) to the beans.
- Cover and simmer for 10 minutes.
- Serve hot.
