Minced meat semolina pancakes is a dish eaten in some Nigerian homes.
Ingredients[edit | edit source]
- Semovita (semolina flour)
- Baking powder
- 1 pinch cinnamon
- Egg
- Butter, melted and cooled slightly
- Milk
- Sugar
- Vegetable oil
- Onion, chopped
- Stock cube
- Garlic, minced
- Suya spice
- Fresh ginger, minced
- Minced meat
- Red bell peppers, grated
- Green bell peppers, grated
Procedure[edit | edit source]
- Combine the semovita, baking powder, and cinnamon.
- Combine the egg and melted butter. Mix in the milk and sugar.
- Stir the semovita mixture into the wet mixture until you get a smooth batter.
- Heat a thin layer of vegetable oil in a pan, add the onion, and fry for about a minute.
- Add the stock cube, garlic, suya spice, and ginger, and fry for another minute or two.
- Add the minced meat to the onions and cook, stirring, until cooked through. Cover and cook for about 5 minutes on low heat.
- Add the peppers to the meat and onions, and cook for 1 minute.
- Cool the meat mixture and stir into the semovita batter.
- Heat a thin layer of vegetable oil in a clean pan, and scoop spoonfuls of batter in to pan to make pancakes. Cook, flipping over to brown on both sides.
