Ofe awa is a Nigerian soup made with very simple ingredients. It is especially eaten by the Nkanu people.
Ingredients[edit | edit source]
- Awa leaves
- Ground crayfish
- Uziza leaves
- Fresh habanero pepper
- Fresh yellow pepper (ose nusukka)
- Ogiri
- Beef or any type of meat, washed
- Dryfish, washed
- Stockfish, washed
- Palm oil
- Seasoning/stock cube
- Ogbono seeds, ground
Procedure[edit | edit source]
- Boil the awa leaves in a separate pot for about 10 seconds to remove the bitter taste. Drain, remove excess water, and set aside.
- Blend the crayfish, uziza, habanero pepper, yellow pepper, and ogiri into a smooth paste. Transfer to a clean pot.
- Add the beef, dryfish, and stockfish to the pot. Wash the mixture from the blender, and pour the water into the meat.
- Season with salt, and seasoning cube. Bring to a boil, and let simmer.
- Stir in the palm oil, then the ground ogbono. Simmer for about 10 minutes.
- Stir in the awa leaves, and remove from the heat.
- Serve with semovita, eba, wheat, or any swallow of your choice.
