Shuku shuku is a very delicious Nigerian snack.
Ingredients[edit | edit source]
- Sugar
- Egg yolks
- Coconut chaff
- Bread crumbs
Procedure[edit | edit source]
- In a large bowl, combine the sugar, egg yolks, and coconut chaff. With a spatula, mix everything thoroughly until it is all combined.
- Make little shuku shuku balls using your fingertips. They should be about the size of table tennis balls.
- Roll each ball gently in breadcrumbs until it is thoroughly covered. Transfer to a baking sheet.
- Bake in a preheated oven at 170°C (335°F) for 20–30 minutes, until golden all over.
Notes, tips, and variations[edit | edit source]
- Coconut chaff is the solid material left over after blending coconut flesh and straining out the liquid.
